Summer is in full swing, picnics and barbeques are rolling out, and we’re sharing tips on how to be the hostess with the mostess this summer with a recipe for one of our most popular desserts – the Texas Sheet cake!

 

This recipe can serve up to 24 people at your next summer gathering, and you can make it right in your kitchen!

 

INGREDIENTS

 

Cake

 

●      2 cups all purpose flour

●      2 cups granulated sugar

●      1 teaspoon salt

●      4 tablespoons high quality cocoa (such as Cacao Barry or Valrhona)

●      1 cup unsalted butter

●      1 cup boiling water

●      ½ cup full fat buttermilk

●      2 eggs, beaten

●      1 teaspoon baking soda

●      1 teaspoon vanilla extract or paste

 

Frosting

●      1 cup chopped pecans

●      1 ¾ stick unsalted butter

●      4 tablespoons high quality cocoa (Cacao Barry or Valrhona)

●      6 tablespoons full fat buttermilk

●      1 teaspoon salt

●      1 teaspoon vanilla extract or paste

●      1 pound powdered sugar, sifted

 

STEPS

 

1.     In a mixing bowl, sift together flour, sugar, and salt.

2.     In a saucepan, cook water and butter until simmering. Turn off the heat and whisk in cocoa. Cool for at least 10 minutes.

3.     In a medium bowl, combine buttermilk, beaten eggs, baking soda, and vanilla – the mixture will bubble. Stir cooled butter/chocolate/water into your buttermilk mixture.

4.     Using an electric mixer, combine the flour mixture and chocolate mixture and blend until smooth. Pour into a greased 18x13 sheet cake pan and bake at 350-degrees for 20-25 minutes.

 

While the cake is cooling, you can make the frosting. The frosting steps are as follows:

 

1.     Melt butter, buttermilk, vanilla, and salt in a saucepan.

2.     Add cocoa, whisk to combine, then turn off heat.

 

3.     Add the powdered sugar, then stir with a whisk until smooth.

 

4.     Stir in pecans and pour warm frosting over the cake, spreading it out to edges with a knife or rubber spatula.

 

5.     Let cool for an hour or more before cutting.
